Preparing the chicken:

1. In a bowl, mix the wheat flour and grated Parmesan cheese.

2. Add the seasoned chicken Scapulas and mix everything, covering all the meat with the mixture.

3. Grease the air fryer pan and add the chicken scapulas.

4. Cook at 180 ºC for 25 minutes, flipping the scapulas halfway through so they bake completely.

Preparing the yogurt sauce:

1. In a bowl, add the ricotta cream, the juice and zest of the lemon, the Dijon mustard, the honey, salt and pepper. Mix everything very well.

Serving:

1. Serve the chicken scapulas with yogurt sauce.
