1. Prepare the sauce: mix the mayonnaise with mustard and dill leaves, to taste. Adjust the salt, if necessary, and season with freshly ground black pepper.

2. Brown the bread in a non-stick frying pan, on both sides. If you prefer, spread a thin layer of butter on the bread before placing it in the oven.

3. Heat the oil to 180 ºC and brown the fillet, flipping it two to three times, for 8 to 10 minutes, until it is uniformly golden brown.

4. Serve the fillet on a slice of bread, drizzle with mustard sauce and garnish with dill leaves.
